Food processing wastewater is typically characterized by “high organic load, high fat content, fine solids, concentrated nutrients, and strong volatility”:
High organic load: COD is often 1,000–8,000 mg/L, BOD₅ is 500–3,000 mg/L, and ordinary biochemical pools are prone to shock loads.
High fat and oil content: Oil (FOG) can reach 100–300 mg/L, which is easy to scale and clog in pipe networks and equipment.
Small suspended solids: SS is generally 200–800 mg/L, mostly protein, starch, and fiber residues, and the removal efficiency of traditional sedimentation tanks is limited.
Rich in nitrogen and phosphorus nutrients: Ammonia nitrogen can reach 50–200 mg/L, and total phosphorus is 10–30 mg/L, providing a “natural habitat” for eutrophication at the back end.
Water volume fluctuates significantly: With different production batches, washing and cleaning cycles, daily water consumption often fluctuates by 30%-60%, and water consumption per ton of product is about 10-50m³.

The biogas produced in the anaerobic stage can be collected and recycled; the enriched organic sludge is thermally dried to generate organic fertilizer, practicing the "zero waste" concept.
